Flashes Prep For Mac

This week was a busy week for our family because it was Gabriel first week of school! Kindergarten to be exact so he’s all like “I’m a big kid now!” And I’m all like “You’ll always be my baby!” Back to school as most of you parents know means getting back into a routine. This was a little bit of an adjustment for us in our household because this summer we were on the road a lot, didn’t stick to bed times and went with the flow of the day. Now that school starts at 8:10 (yikes!) that means getting up way before that to get myself ready, the baby fed, Gabriel dressed, fed and dropped off at school before the bell rings. This means waking up at 6am for me if I want a little bit of quiet time before the kids wake up. I always like waking up before them, having my coffee, eating my breakfast and doing some writing. It gets my day off on the right foot.

If I wake up the same time as them, I find that our mornings are chaotic, hectic and rushed which is not good for anyone! This week went okay but I decided to prepare a little more for the coming weeks to make our days go as smoothly as possible. Drop offs and pick ups can be crazy but they don’t have to be. Breakfast this week has consisted of oatmeal or cereal. For lunch a simple sandwich or Mac and cheese.

To change it up and add a healthy variety to our our diet, I decided to make ahead some meals that we can take on the go, will pack nicely in a lunch box and that my son will actually eat. Here are the meals that I prepared for the upcoming week:.

Egg frittata in muffin cups. Strawberry banana smoothies.

Hard boiled eggs. Spinach and tomato egg scramble. Chicken salad for sandwiches.

Prep

Pasta sauce and spaghetti noodles. Marinated chicken thighs for salads. Vegetable fried rice. Pesto pasta salad.

Strawberries and blueberries ready to eat. Hummus from Trader Joes and baby carrots Gabe can be somewhat picky at times so having a variety of different things for him to choose from works best for us.
